It was cold here in Charleston, SC this past winter, well… for us anyway! There were several occasions that called for a pot of hot, comforting soup. I ran across this recipe on a blog called The Girl Who Ate Everything – and thought it sounded good, so I gave it a whirl (original recipe via Taste of Home!) – It’s a winner! I didn’t change much, a little less butter and flour, and after the first time I made it, I diluted the chicken bouillon (using Better Than Bouillon) – the first time was a little too bouillon-y… This soup has fabulous flavor and texture. The second time I pureed a little bit more than the previous recipes.
This soup served with a side salad, or in this case, whole grain bread, lightly toasted, sprinkled with cheddar and put under the broiler. A wonderful combination… Small portions but delectable! Pretty on the chilewich placemat too!
Beware – this soup is HOT right out of the pot… lesson learned the hard way!
